Low Carb Sausage Gravy with Mug Biscuits

I know, does not sound healthy, but this recipe is low carb, and an indulgent treat when you are craving something rich and hearty. I have been making a low carb mug biscuit for quite awhile now. But yesterday, one of the littles asked if I could make it egg free. CHALLENGE ACCEPTED!



A few recipe notes...

  1. I usually make this in my ceramic egg cooker. Got it from one of those pampered chef parties, but you can make this in any old coffee mug.

  2. This recipe is gluten free and egg free. (Except where I added scrambled eggs, because that's what I like).

  3. To make dairy free, swap out the butter with your preferred alternative and the heavy whipping cream with unsweetened coconut cream or milk from a can.

  4. I would have preferred ground breakfast sausage for this but I used frozen links I had on hand.

  5. I adapted this recipe from DietDoctor.com. This site is a wealth of knowledge for low carb and keto lifestyles for beginners and pros.

  6. Also, let's be honest, I am not a food photographer, and I have no idea how to make sausage gravy and biscuits look stunning. But seriously, it was so good!


In case you were wondering, this biscuit was Kiddo Approved! The biscuit comes out with a nutty flavor and hearty texture that I preferred over the original recipe.




 

Low Carb Sausage Gravy with Mug Biscuits


Cook|Prep Time: 20 minutes

Servings: 1


Biscuit Ingredients:

1 TBSP Almond Flour

1 TBSP Coconut Flour

1 TBSP Ground Flax Seed

3/4 TSP Baking Power

1 pinch of Salt

3 TBSP Water

1 TBSP Heavy Whipping Cream


Sausage Gravy Ingredients:



Biscuit Directions:

  1. Grease your mug or egg cooker with butter/butter alternative/oil of choice.

  2. Combine all dry ingredients to mug and stir to combine.

  3. Add 3 TBSP water and stir until combine.

  4. Now add 1 TBSP heavy whipping cream and stir once more to combine. Make sure there are no lumps.

  5. Microwave on high for 2 minutes. If the center is still soft microwave again for 15 to 30 seconds.

  6. Gentle run a butter knife around the edge of the biscuit to separate it from the mug. Turn upside down to remove. Cut in half. Use for your sausage gravy, or make a breakfast sandwich. So many uses for this little mug biscuit/bread.


Sausage Gravy Directions:

  1. Cook sausage as directed in a skillet. Break it up a bit for bite size pieces. If using links like I did, once browned, cut into bite size pieces.

  2. Add butter, salt, pepper, and thyme to taste.

  3. Once butter is melted add bone broth or stock. Turn heat to medium high.

  4. When broth is bubbling add the xanthan gum, if using. TIP: do not dump in one spot as you will get a big lump. Instead, gentle tap the measuring spoon to sift the xanthan gum over the liquid to even distribute.

  5. Use a whisk to combine. Gravy will begin to thicken.

  6. Add your heavy whipping cream. Stir to combine.

  7. Serve over your mug biscuit.


Notes:

I added a scrambled egg to mine. I also like a fried egg sometimes. Let me know what you think of this recipe and how you jazz it up!

I wonder how well a "beyond" sausage would work, or any meat alternative, brussel sprouts, cauliflower?

I will! Maybe this weekend. Been doing vegetarian/meatless since after Thanksgiving with Alternate Day/OMAD fasting. I was just starting to look into gluten free almost a month ago. This is really good reading, definitely keep it up!
