Egg Roll Bowls

I am so excited to share recipes on my blog!! AND guess what... NO long a$$ story about this and that till you get to the actual recipe! YAY! I know, I hate that too.



But since this is my first recipe post I will share a couple of things first. All of the recipes found on my blog will be gluten free. I was diagnosed with Celiac Disease in 2014 and quickly converted all my favorite recipes. But no worries if you aren't gluten free like me. You can easily swap out ingredients. You'll also be able to find many Keto and Dairy free recipes here too! So on with the show....



 

Keto Egg Roll Bowls



Cook|Prep Time: 35 minutes

Servings: 4


Ingredients:

2tsp toasted sesame oil

1 16oz bag of coleslaw mix

2 7oz bags of Miracle Noodles (angel hair style) can sub rice or linguini noodles

2 eggs

4 cloves minced garlic or 2tsp of the already minced kind

2 1in pieces fresh ginger root - peeled and minced or grated

1 small bunch green onions (scallions) chopped into 1/4in pieces

16oz ground pork - can sub ground turkey

1 tbsp chili- garlic sauce - I like Sambal Oelek by Huy Fong Foods

1/4cup tamari sauce - or soy sauce if not gluten free

1tsp red chili flake - more or less depending on your taste for spicy foods

1/3 cup mayonnaise

1/8tsp kosher salt


Directions:

  1. Preheat wok or large skillet over medium heat. Add 2tsp toasted sesame oil.

  2. Prep veggies and produce if not already done. Add Miracle Noodles to a colander and rinse under cold water, set aside.

  3. Add pork to hot skillet. Cook, breaking apart, until almost cooked through.

  4. Add garlic and ginger to the pan and sauté for 30 seconds.

  5. Add bag of coleslaw mix and rinsed|drained Miracle Noodles to the pan. Mix well to combine.

  6. Add crushed red pepper and 1/4 cup of tamari sauce. Stir to combine and cook for 4-5 minutes, or until the cabbage and carrots have softened.

  7. Drain off excess liquid from pan if desired - I did not because I didn't want to loose all that yummy flavor. Make a well in the center of the pan. Crack your 2 eggs in the middle and scrabble until cooked through, 1-2 minutes. Then stir to combine.

  8. In a small bowl combine chili-garlic sauce, mayo and salt.

  9. Divide into 4 servings. Top with green onions and a dollop of spicy mayo mix. Enjoy!

Notes:

  • Option to add chili-garlic sauce, mayo, salt and green onions directly into the pan and combine. That's what I did and it was so good!

  • Top with toasted sesame seeds for another great addition.

  • Not Keto? No problem, omit the mayo.
